We used leftover rice, home-made pico de gallo, guacamole and corn tortillas (store-bought). Ryan also made margaritas from scratch!

The Pico de Gallo recipe (I got to use my Slapchop!):
1 medium tomato chopped
1 white onion (the kind that makes you cry!) finely chopped
1/4 red onion finely chopped
1 jalapeno pepper finely chopped
A handful of cilantro de-stemmed
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
Guacamole
1 avocado
a handfull of cilantro de-stemmed
4 tablespoon scoops of the Pico from above
(I was lazy and had also run out of onions!)
Margaritas (yum!)
2 ounces tequila of your choice
1.5 squeezed lime
1 ounce Grand Marnier

I realize I neglected to post a picture of an actual taco. We were too hungry to take pictures.. it was also a bit messy once taco construction began. I wish we had those taco holders Zengo has!

ReplyDeleteAs much as people hate on the Slap Chop (myself included), it came in clutch finely chopping the white onions. I would have been in a puddle of tears otherwise!
